So today at work we all got together to celebrate our office’s work-study students (students that have a position on-campus that is paid through their financial aid package and the federal government). I TOTALLY forgot to put something together ahead of time so I ran out to the grocery store, grabbed a box of strawberry cake mix and some cream cheese icing and I whipped these bad boys up in about 30 mins.
Strawberry Cupcakes
They look fancypants but they truly aren’t. Seriously. You can make these. I put the batter into the little cupcake-cups, baked and then let cool. Then I piped the icing and the melted chocolate. DONE. So easy a 3rd grader could do it. Anyways, the students and staff liked them and they look awesome so I thought I’d post it. These are homemade…. as in…. yes, I made them at home.
